Kneading

Everything baked at Pita Fresca is kneaded by hand early in the morning, with knowledge and passion!

Each dough takes its own time, needs its own method and ingredients.

The traditional recipes handed over to us by our mothers and grandmothers carry the local history, they keep it alive in our memory. They bring back childhood memories, they tickle happily our nostalgia and link the morning and the afternoon, the evening and the night in the town with the past.

Each recipe, however, carries its own memory; the pizza, the croissant, the ciabatta and many others among our hand-made products are cultural components of countries with their own gastronomic tradition.

What they all have incommon is the prime quality flour from the watermill and the use of only authentic, pure additional ingredients.

Κοινός παρανομαστής για όλα το αλεύρι εκλεκτής ποιότητας από τον μύλο της περιοχής και η  χρήση μόνον αυθεντικών, αγνών επιπλέον υλικών.

Our Pies

Inspired by the local recipes and our mothers’ stories, our pies are prepared daily and each of them is filled with locally sourced goods.

We prepare pastries in the traditional way, without additives and raising agents, just with flour from the watermill. We knead it with passion and care. We roll and spread it out in sheets (fillo) using extra virgin olive oil. We fill the pies with local pure ingredients based on traditional recipes: large pumpkins for sweet pumpkin pies. Spinach, dill, spring onions, myronia (chervil), kafkalithres (Mediterrannean hartwort) for spinach pies. PDO (protected designation of origin) fetacheese with fresh mint for cheese pies.
We are also inspired by the flavors we all love and we improvise with pies filled with pork, kebab and other savors referring to the famous souvlaki.
We bake our pies using the experience handed over to us by the older bakers. We can’t resist smiling with the smells spread from our shop throughout into the picturesque alleys of beautiful Monemvasia.
